It ain't easy or cheap to produce. It's a long process to produce good BBQ. It's an investment in time as well as money. We don't have the right kind of wood available cheaply eg. mesquite, apple, hickory. We're a steak and Tex-mex city. Why doesn't El Paso do good BBQ?
El Paso does fall in the mesquite footprint... honey mesquite (prosopis glandulosa). I guess they're even more plentiful in other parts of the state? But how expensive are mesquite chips, especially if you buy in bulk? Yeah, it takes time and money, but that's true whatever city it's made in. I will definitely check out Desert Oak BBQ. A Dickeys BBQ just opened at the food court in Sunland Park Mall and I thought it was very good. I know it's a chain restaurant but it was good.
