Some thoughts:
I agree whole heartedly with the Sparky's recommendation, and I stop in Hatch to enjoy a Sparky's burger whenever I go to Albuquerque. Burgers cooked over pecan wood topped with cheese and the local green chiles - amazing!
In Albuquerque, I found an inexpensive banh mi (Vietnamese sandwich) shop named Banh Mi Coda. If you go get the lemon grass beef banh mi - delicious.
In Albuquerque, the Bio Park contains a very nice zoo for a city that size (it's head and shoulders above the El Paso Zoo), as well as a decent botanical gardens and aquarium. My family has also enjoyed the New Mexico State Fair the last couple of years.
Everyone I believe loves Cloudcroft and Ruidoso - it's beautiful up there. If visiting Ruidoso, and if you're into history, I would strongly suggest a side trip to Lincoln, where you can learn all about Billy the Kid and the Lincoln County War.
When it comes to Southern California Mexican food I love the *berto's taco stands. Both the carne asada and California burritos are amazing, and I MUCH prefer flautas covered in guacamole and real cheese than floating in dishwater consistency tomato sauce and covered in horrible government cheese. For sit down Mexican restaurants, however, I much prefer those in El Paso.
One final note: as you can see above, I obviously agree with the idea that Chicos is overrated, but In-n-Out? I haven't had a better fast food burger than a double double animal style (though a Lotaburger with cheese and green chile is pretty damn good).
